Maestro Mezcalero Edgar Ángeles Carreño first roasted the agaves in a conical earthen oven for several days. Then he used an electric mill to crush the agave and separate the fibres before fermentation in sabino wood tanks only adding well water and allowing the natural yeasts around the palenque to do its magic, a double distillation in Filipino style clay pot stills. This expression is one of our favourites because both agaves (one wild and one cultivated) have its own characteristics and you can appreciate them without feeling like one is overpowering the other. Very well balanced and in complete harmony of aromas and flavors, each year will taste different depending of nature's behaviour, which make it even more exotic and interesting. This expression is a classic, but never gets boring.
This 2022 Espadín / Largo is made with 60% Maguey Espadín (Agave Angustifolia) and 40% Maguey largo (Agave Karwinskii). Only 255 litres were produced in March 2022.
