With a life cycle lasting between 15 and 30+ years, the Tepextate is a plant that boasts a striking yellow inflorescence during spring months. In the Tehuacan mountains, its green leaves may take on a whitish striping appearance. Known scientifically as Agave marmorata, this plant's name references the marbling effect of these white markings. With a vast range of aromas and flavors, from mineral and lactic to herbal and fruity, it is highly prized for its complex taste profile.
