For master distiller Fabiola Torres-Monfil (Faby) and her family, the making of Pechuga mezcal is a moment of celebration, a culmination of the production season. This distillate is a token of gratitude to nature for providing the essential agaves, water and firewood every year. On May 3rd, Santa Cruz Day, Zinacantan opens its doors to the community for a party filled with food, mezcal, and music. A celebration that roots back over 300 years, even before agave distillates became trendy. Annually, Zinacantan distills 80 liters of Pechuga, a double distillate made with Maguey Papalometl (Agave potatorum). This mezcal is distilled with a wild and organic turkey smothered in mole poblano, prepared from a secret recipe by Faby's mother. The result is an exquisite 48 AVB distillate that truly captures the wild and adventurous spirit of this community.
