The new generations of the Torres Monfil Family (sisters, children, nephews), heirs of a family tradition of more than 300 years, see themselves as some of the most rebellious against the mass production of Mezcal. Its process respects the traditional production style of its family, under dry fermentation and a single distillation, harvest and production of mezcal only during the season of January to May.
Zinacantan only uses wild and agaves cultivated from seed, no chemicals or peptises, wild natural yeast, dry fermentation, and only pruning of trees for distillation. No tree is completely harvested. After neutralising the pH, the vinasses are reused in the nursery, as composts or to cover the walls of the distillery's dry bathroom and seed bank.
