This classic expression is made with 100% maguey Espadín (Agave Angustifolia - 10 years average of age) from the central valleys of Oaxaca. Maestro Edgar Ángeles Carreño first roasted the agaves in a conical earthen oven for several days (depending of weather conditions and amount of agave is the cooking time required), then he used an electric mill to crush the cooked agave before fermentation with well water and using only spontaneous natural yeast, and double distilled in Filipino style clay pot stills, following the traditional way of process he inherited from his father, Don Lorenzo Angeles. This is a great expression for sipping or in a cocktail with your favourite mixer.
