This is a very special expression from maestro Edgar Ángeles Carreño. He used 46% cultivated maguey Barril (Agave Karwinskii - 15 years average age), 30% cultivated maguey Cuish (Agave rodhacantha - 12 years average of age), and 24% wild maguey Cirial (Agave karwinskii - 13 years average age). After cooking the hearts of the agaves "piñas" in a conical earthen oven for several days, like he does with other productions (the cooking time depends on weather conditions and amount of agave), then he used his electric mill to separate the agave fibres before fermentation using only natural yeast and well water, and then double distilled it in Filipino style clay pot stills (same traditional way since 1898). Finally, he let the 35 litres of this small batch production rest in glass for 1 month before bottling.
